Chicken with tomatoes and lentils
INGREDIENTS (2 PEOPLE)
- 2-3 chicken breasts (depending on size)
- 1/2 tsp grated lemon zest (use organic and unwaxed lemons)
- 3-4 thyme sticks
- 1 finely chopped garlic clove
- salt and pepper (to taste)
- 2 tsp of good quality virgin olive oil
- 250-300g of cherry tomatoes (cut them in half)
- 100g green lentils (you can also use puy if you prefer) (cook them following the guidelines on the pack)
METHOD
- rub the chicken with salt and pepper
- then fry the chicken breasts so they are nice and golden on every side
- lower the heat a bit and add the cherry tomatoes and thyme
- cook them for 8-10 minutes or until the chicken is cook through (the juices should run clear)
- Then add the cooked lentils
- add the lemon zest and make sure it is all nice and hot
- taste to see if you need to add more salt and pepper or thyme
- When it is all heated through serve up with spinach and other vegestables you might fancy
