Pork and vegetable stir fry

INGREDIENTS (2 PEOPLE)

  • 1 tsp good quality oil (i use coconut myself as I like the taste)
  • 1 tsp of red curry paste ( I use parts ingredients)
  • 400 grams pork loins (cut into squares) 
  • 1 carrot (chopped into medium sticks)
  • 1 apple (peeled and chopped in to 1cm squares)
  • 1 small red onion (finely sliced)
  • salt and pepper (to taste)
  • 1 tsp paprika (not smoked)
  • 100 ml apple juice (not from concentrate)
  • 1 stalk of celery chopped up in 0.5 cm pieces
  • 4 asparagus chopped into 2 cm pieces
  • 75g of mange touts
  • a tsp of finely chopped coriander or parsley to be added before serving up

METHOD

  • Heat up the oil in your wok and add the curry paste.
  • When the paste is hot (not burned) add the meat and brown it on all sides.
  • Add the onion and carrot and fry for 4-5 minutes
  • add salt and pepper and paprika (you might need to add more or less depending on taste)
  • add the apple juice and let it all cook for a few more minutes.
  • add the asparagus, celery and cook them for an additional 2 minutes before you add the mange tout.
  • just before serving up add the coriander or parsley.

I like to have this with a little white rice or broccoli rice
